Quick and Easy Meal
If you’ve indulged too much over Easter and you’re now hoping to shed a few pounds before your summer holiday, why not rustle up a healthy meal tonight – succulent, lemony chicken. Those of you who are not calorie counting and don’t mind some carbs (I personally can’t do without them!), serve it either with pasta (tagliatelle works well) or rice.
What you will need….
Ingredients (serves 4)
- 4 chicken breasts
- zest and juice of 1 lemon
- 1 tablespoon clear honey
- 2 garlic cloves, crushed
- 1 teaspoon oregano
To serve with rice – I use the microwave packs of rice but it’s cheaper to buy a big bag of uncooked rice and boil enough for each person (roughly 50-100g per person, depending how hungry you are!)
To serve with pasta – boil some water in a pan with a pinch of salt and a tiny bit of olive oil (to stop the pasta sticking together) and add about 200g of pasta to serve four people and cook for as long as the packet states.
1. Preheat oven to 190 degrees Celsius. Place chicken breasts in a roasting tin.
2. Mix together the other ingredients and heat in the microwave for one minute until hot. Stir well and pour over the chicken.
3. Roast in the oven for 30 minutes, basting often. Leave to stand for five minutes before serving.
Perfect served with tagliatelle or rice!
