The equipment and facilities available at the Centre and NEWI are state of the art for characterisation and modification of hydrocolloid, including: Gel permeation Chromatography or filed flow fractionation coupled on line to a multi angle laser light scattering, High Performance Liquid Chromatography, Control Stress or Strain Rheometer, High Pressure Homogenisation, Laser Diffraction for droplet size measurements, Turbidity Zeta Potential measurements, Dynamic Light Scattering, Differential Scanning Calorimetry.
